Naked Devil�s Food Chocolate Cake with Berries ??????????

I decided to make this chocolate cake for my hubby's Birthday as few of my blogger friends highly recommended this cake to me. As usual, i like simple of cake decoration, like this naked style ^_^.




I always like a cake recipe using buttermilk, this cake is rich, moist and not greasy , definitely a keeper.









If you want a taller cake then use 6" cake tin otherwise you can replace with 7" size of cake tin. Or you can make into cupcakes like the original recipe.

Lazy me didn't use a cake divider, resulted a uneven cake, chantily cream & chocolate sauce also melted during the decoration (due to hot weather).

Nevertheless, this cake was awesome, well received by my family especially my hubby gave thumbs up. With a lot of berries, gave a nice contrast to this chocolate cake.


Naked Devil�s Food Chocolate Cake with Berries ??????????
*made one 6� round cake tin or a 7� round cake tin (shorter cake)

50g unsweetened cocoa powder (I used valrhona cocoa powder)
60g semi-sweet chocolate (I used Hershey�s semi-sweet cooking bar), chopped
1/2cup (120g) hot boilling water
1/2cup (120g)  buttermilk ( you can replace with natural yogurt)



150g cake flour
3/4tsp baking soda
� +1/8 tsp fine salt

120g brown sugar
100g caster sugar
100g vegetable oil ( I use sunflower seed oil)
2 large or A size eggs
1tsp vanilla extract

              Method
1.  In a mixing bowl, combine cocoa powder, chopped semi-sweet chocolate, pour boiling water over it and whisk till smooth. 
2.  Add in buttermilk and mix well. Set aside.
3.  Sift cake flour, fine salt and baking soda together. Set aside.
4.   In a mixing bowl, add brown sugar, sugar, vegetable oil, vanilla extra and eggs, beat the mixture until light and creamy by using hand electric mixer.
5.  Using a hand balloon whish, mix in flour mixture, alternating with chocolate mixture in additions. 
6.  Fill the batter in a 6� lined round cake tin (line bottom and sides) and bake in preheated oven at 175 deg c for 55 minutes until a skewer inserted into the centre comes out clean. 
7. Let cake cool on a wire rack before frosting it. Slice cake into 3 pieces, frost with Chantilly cream (150g whipping cream and 10g sugar, beat till stiff) on each layer, drizzle with chocolate sauce ( 50g chocolate melt with 45g whipping cream), topped with a lot berries (strawberry, blueberries and cherries). Dust with icing sugar.

Apple Yogurt Cake ??????

When i see two small Granny Smith apples have been sitting on the countertop for quite some time. It was not enough to make a apple tart. So i made them into this apple yogurt cake since i was craving for some cake at that time ^_^.











Also wanted to try out this new brioche pan that bought it for quite some time already.


Glad that my family like this cake which is less sweet, moist and no greasy.

Apple Yogurt Cake ??????
*for a loaf pan or brioche pan

100g Apple, (I use Granny Smith), peeled and cut into small thin slices
2tbsp sugar

100g unsalted butter

Pinch of salt
1/4tsp vanilla extract
80g caster sugar
2 eggs (large or A size)
50g natural yogurt
150g cake flour
1tsp baking powder

Method
  1. Sift the cake flour and baking powder together.
  2. Add apple slices and sugar together in a saucepan and cook over medium heat, stir and cook till apple slightly soften and sugar is dissolved. Set aside to cool.
  3. Beat butter, sugar and salt until light and fluffy, add vanilla extract, beat to combine.
  4. Add in egg one at a time, beat to combine.
  5. Add cake flour and yogurt alternately, mix to combine.
  6. Put in the apple pieces, fold to combine
  7. Bake at a pre-heated oven at 180C for 45-50mins.

Red Velvet Layered Cake with Cream Cheese Frosting ?????


My daughter requested one of her favourite cake -Red velvet cake with cream cheese frosting for her 18th Birthday. 



Nowadays i prefer raw decoration of cake, so got excuses not to have a neat frosting , hahaha..

I also like to have fruits, herbs and flowers as topping. Too bad this time i couldn't get edible flowers, so i decorated with nice and fresh US black figs, blueberries and dill herb from my garden.

We always feel red velvet cake selling outside is too sweet for our liking, this time i tried to reduce sugar amount, but surprised that the cake texture still moist and light. And I also tried using egg separation method.
Anyway, i don't advise you to eating this cake too often, because the amount of red food colouring, added sound scary ,LOL.


After checked several online recipes, i modified to become this recipe.

Red Velvet Layered Cake with Cream Cheese Frosting ?????
*for a 6 ��round cake

For the cake
55g unsalted butter, room temp
130g caster sugar
60g corn oil or any other vegetable oil
2 egg yolks (A size)
1/4tsp vanilla extract
1/2tsp distilled white vinegar
1tsp red food colouring
120ml buttermilk
170g cake flour (I use Japanese cake flour)
1/2tsp baking soda
1/4tsp fine salt
10g cocoa powder ( I use Valrhona cocoa powder)


2 egg white (A size)

For the cream cheese frosting
150g cream cheese, room temp
40 butter, room temp
60g icing sugar
1tbsp lemon juices
1 lemon zest

Method
  1. Sift cake flour, baking soda, salt and cocoa powder, set aside.
  2. Use a handheld electric mixer, beat butter and caster sugar till light and fluffy.
  3. Add in corn oil, beat till mix well. Add in egg yolk, beat till well combined.
  4. Add in vanilla extract, distilled white vinegar and red food colouring, mix it well.
  5. Mixer on low speed, add in dry ingredients alternating with buttermilk, incorporate well.
  6. In another clean mixing bowl, beat egg white till soft peak formed. Fold into batter with a silicone spatula.
  7. Pour into the prepare cake tin that lined paper on bottom. Bake at 170C for 50-55mins or until a skewer insert and came out clean. Set aside to cool down before frosting.
  8. To make cream cheese frosting. Beat cream cheese and butter till light and creamy.
  9. Add in icing sugar and mix well on low speed.
  10. Add in lemon juices and lemon zest, combine well.
  11. Slice the cake into 2 pieces, frost the whole cake with cream cheese frosting, and decorate as per desired.

Coconut and Chocolate Butter Cake ?????????

This is a cake that i tried to replicate after tasted the similar one during my recent trip to Frankfurt Germany.




Bottom layer is chocolate cake, and top layer is Coconut butter cake, when both combine together , it taste so good.




Coconut and Chocolate Butter Cake ?????????
*for a 8� square cake pan

225g butter (unsalted)
180g caster sugar
4 eggs (large or A)
1tsp vanilla extra
210g cake flour, sifted
1 and 1/4tsp baking powder, sifted
4tbsp milk



For coconut layer- 30g Hawaii coconut flakes
For chocolate layer- 1tbsp cocoa powder + 1 and /1/2tbsp milk � mix together , 20g chocolate chips
For sprinkle on top � 2tbsp desiccated coconut

Method
1.      Place the butter, sugar and vanilla in the bowl of an electric mixer and beat until light and creamy.
2.      Add one egg at a time, beating well after each addition. After well combine, slightly increase speed and beat for 1min till fluffy.
3.      Add the flour and baking powder (sifted together) and beat well to combine, fold milk alternately and combine well.
4.      Equally divide batter into two portions, one portion mix with coconut and another portion mix with cocoa powder and milk, and chocolate chips, mix well.
5.      Spoon chocolate batter in the cake tin lined with paper, then top with coconut batter. Tap the tin to remove any air bubbles.
6.      Bake at preheated oven at 170c for 55mins or until a skewer insert and come out clean.
7.      Cool on wire rack, sprinkle desiccated coconut on top.

Orange Butter Cake with Honey Almond Crust ??????????

I bought a bag of flaked almonds during CNY as i was thinking to make some crispy almond butter cookies at that time. I didn't manage to make these cookies as lacking of time. So i use it to make this butter cake instead.




This time i modified a bit of the old recipe, just bake a normal orange butter cake then top with honey flaked almond which is the most yummy part of this cake .




Orange Butter Cake with Honey Almond Crust??????????

For orange butter cake
125g butter
90g sugar
2 eggs (large or A size)
1/2tsp vanilla extra
125g cake flour
1/2tsp +1/4tsp baking powder
2tbsp orange juices
1tsp orange zest

For the honey almond crust
45g flaked almond 
25g honey
15g butter

Method
  1. Sift cake flour and baking powder, set aside.
  2. Place the butter, sugar and vanilla extract in the mixing, with electric hand mixer, beat until light, pale and creamy.
  3. Add one egg at a time, beating well after each addition. After well combine, slightly increase speed and beat for 1min till fluffy.
  4. Add in flour and baking powder and orange zest, beat well to combine, fold orange juices alternately and combine well.
  5. Spoon batter in a loaf tin or cake pan (lined paper at bottom). Tap the tin to remove any air bubbles.
  6.  Bake at preheated oven at 170c for 30mins or until a skewer insert and come out clean.
  7. To prepare honey and almond crust topping, add butter, honey and flaked almond into a shallow saucepan. Heat to melt the butter and honey, ensuring that the almond slices are well-coated with the honey-butter mixture.
  8. Top with the honey almond crust mixture evenly over the cake and return the cake to the oven at 180C until the almond are roasted to a lovely golden brown, which takes approx. 10 min (I changed to top heat or grill on last two minutes to brown the top).
  9. Wait for the cake to cool down before slicing.

Marble Butter Cake ??????~???? 2015

I love butter cake, especially love it when mix with some chocolate, like this marble butter cake. I have a habit to enjoy butter cake for breakfast before I started to cook big meals on CNY eve day. Last time I use to buy from pasar pagi (morning wet market) during CNY. But now I can bake this cake anytime ^_^.


 
 
I still use back my old butter cake recipe this time, but I didn't using egg separation method as I was rushing for last minutes CNY baking cookies. ?


 
I just baked like normal butter cake by adding whole egg . But i still want the same texture like using egg separation method. So I extended the beating time after adding all egg, as to beaten up the egg. Also i reduced a bit of the oven  temperature and watched out for the perfect timing before the cake getting cracked . My hubby told me this cake is simply perfect at right sweetness, light and not greasy. I also agreed with him, we just love it!?


Marble Butter Cake ??????
*for a 8� cake 

250g butter (salted)
180g caster sugar
4 eggs (large or A)
1tsp vanilla extra
230g cake flour, sifted
1 and 1/2tsp baking powder, sifted
4tbsp milk

1tbsp cocoa powder + 1/2tsp coffee powder + 2tbsp milk � mix together 

Method

  1. Place the butter, sugar and vanilla in the bowl of an electric mixer and beat until light and creamy.
  2. Add one egg at a time, beating well after each addition. After well combine, slightly increase speed and beat for 1min till fluffy.
  3. Add the flour and baking powder (sifted together) and beat well to combine, fold milk alternately and combine well.
  4. Remove 250g of plain batter and place in another clean mixing bowl, mix well with cocoa mixture.
  5. Spoon the two batters, plain and chocolate batter, alternately into the cake tin (lined base and sides). Using a butter knife, gently swirl it around the mixture in the tin a few times to create a marbled effect. Tap the tin to remove any air bubbles.
  6.  Bake at preheated oven at 170c for 50-55mins or until a skewer insert and come out clean.
