Yellow Glutinous Rice Wine Chicken ???

First time cooking rice wine chicken using my homemade yellow glutinous rice wine, it has no sour taste but sweet and nice wine aroma, yummy!

It is easy to cook this dish, only with few ingredients.

I added the wine in two batches, the last addition of wine is to give it strong wine aroma.

You may adjust the rice wine amount to suit your preference. Since i have kids to take this dish, so i didn't add too much of wine. When cooking this dish during confinement time, no water will be added, only added rice wine.

Yellow Glutinous Rice Wine Chicken???

750g chicken (1/2 portion), cut into bite-size chicken, I used Cho Gai
40g black fungus, soak 1hr to shorten, shredded
30g young ginger, shredded
200ml yellow glutinous rice wine, or adjust as per your preference
350ml water

3tbsp sesame oil
1tsp salt or to taste

Method
  1. Heat sesame oil in a wok, add in ginger and stir fry till aroma.
  2. Add in chicken and black fungus, stir fry till chicken colour changed.
  3. Add in half of the wine and all water, add in salt, bring to boil, reduce medium heat and simmer for about 20-25mins or until chicken tendered.
  4. Add the remaining half portion of wine, cook for another 1min. Dish out and serve.

Butter Chicken ???????

Butter chicken is a classic Indian cuisine. Recently I just saw this recipe in a new cookbook that I bought, immediately bookmarked to try it out. Frankly, even though this cuisine so called butter chicken, but the butter amount used is very minimal only.

This cuisine remind me of the Ayam masak merah which is tangy, spicy and savoury. But the good thing of this dish is do not require to deep fry the chicken like ayam masak merah, and the gravy is less spicy, so kids also can enjoy this dish.

Chicken with 40 cloves of garlic ??????

While I transited at CDG airport Paris when returned from US trip. I spotted a French cookbook in English, so happy and quickly bought this cookbook. The first recipe immediately I try out is this Chicken with 40 cloves of garlic, perfect to cook in a lazy Sunday dinner.

I use French oven to cook this, you can also use any casserole dish.?

spread the flesh from the toasted garlic on bread, yum!

Chicken with 40 cloves of garlic ??????

1 whole chicken ~1.2kg (I use kampong chicken )
2 celery stalks, including leaves
2 sprigs rosemary
4 sprigs of thyme (I replaced with dry thyme)
4 sprigs Italian parsley
40 garlic cloves, unpeeled
2tbsp olive oil

1 carrot, roughly chopped
1 small onion, cut into wedges
1/2cup white wine
1 and 1/2tsp sea salt or to taste

Method

  1. Preheated the oven to 200C. Put a chopped celery stalk and 2 sprigs each of the rosemary, thyme and parsley into the chicken cavity. Add 6 cloves of garlic.
  2. Brush the chicken liberally with some of the oil and season with oil. Scatter about 10 more garlic cloves over the base of a large casserole dish. Put the remaining sprigs of herbs, chopped celery, carrot and onion in the casserole.
  3. Put the chicken in the dish (breast side up). Scatter the remaining garlic cloves around the chicken and add the remaining oil and the wine. Cover and bake for 1hour, or until chicken is tender the juices run clear when the thigh is pierced with a skewer.
  4. To serve, carefully lift the chicken out of the casserole dish. Strain off the juices into a small saucepan. Pick out the garlic cloves from the strained mixture. Spoon off the fat from the juices and boil for 2-3mins to reduce and thicken a little
  5. Cut the chicken into serving portions, pour over a little of the juices and scatter with garlic. Toast the baguette slices, spread soft flesh squeezed from the garlic on the bread, serve with chicken.

Boxing Chicken ???

Today I managed to find some time to cook this Boxing chicken. This Boxing chicken is just normal deep fry chicken wings, but the tricky part is you have to debone two parts of the chicken wings. Recently I learnt the Chinese name of this dish called as ??? ( an iron cock) ^_^

For the mid wing, you have to remove the small bone, and this part is most yummy part than the drummet.?

For drummet, it was much easy to make into lollipop shape!?

I cooked a pot of pumpkin rice (that two pumpkin flowers are from my garden ^_^) enjoy with these Boxing chicken.?

Boxing Chicken ???

8 chicken wings
Oil for deep frying

For the marinate
1 and 1/2tsp light soy sauce
1tsp salt
1tsp sugar

1/2tsp sesame oil
White pepper
1/4tsp Chinese five-spices powder
1tsp grated ginger
1tsp grated garlic

For the coating
6tbsp corn flour
2tbsp plain flour
1tbsp rice flour
1/4tsp salt

Method

  1. Remove the chicken tip, separate chicken mid wing and drummet.
  2. Take the chicken mid wing, use a sharp knife cut around one end, slowly cut and push the meat and skin to separate from the bone. Remove the small bone and left only one big bone. Then pull the meat down to get little chicken lollipop. Repeat the rest. As for drummet, do the same thing except you dont need to remove the small bone.
  3. Marinate the chicken with all seasonings for at least 2 hours.
  4. Coat the chicken with flour mixture, repeat the rest till finished.
  5. Deep fry in batches till golden and crispy. Serve with sweet chili sauce.

Roasted Chicken stuffed with Tomato rice ??????

We had this nice roasted chicken stuffed with tomato rice at a Portuguese restaurant during the Macau trip the other day. I tried to replicate this roast chicken at home recently. The original dish was deep fry the chicken, but I use hassle free method by roast the chicken in the oven ^_^.

My kids love this stuffed tomato rice, but I can't cook much as i can't stuff too much of rice in the small cavity of kampong chicken.?

I let the chicken marinate in the fridge overnight and uncovered as try to dry the skin in order to get crispy skin. At the end of baking, brush with some butter, to have nice buttery skin.
