Dual colours Purple Sweet Potato Mantou or Bao ??????

These dual colours of baozi or mantou was inspired from a TV food show. I always like to use purple sweet potato in baking or making baozi as the colour always look beautiful.




Too bad, i have no time to capture on how to make each of these cute character of baozi. But they are not difficult to make actually.

Porcupine or Hedgehog (what my little son claimed this ^_^)
First just shape them into oval shape with one end more sharp to look like mouth. Then using a sharp scissor to snip the top part. Use a toothpick to prick two holes and insert with red beans as for eyes. If you don't have red bean available, you can just prick two holes only.


As for piggy (some said it look like mice) pattern, it is almost like making piggy mooncake , refer here 





As for flower buns, cut purple dough and plain dough into thin and long stripes, mix them and twist together.


Dual colours Purple Sweet Potato Mantou or Bao??????

Purple dough
60g mashed purple sweet potato ( steamed then mashed)
120g Pao Flour
5g vegetable shortening
30g caster sugar
1/2tsp double action baking powder
1/2tsp instant yeast
65g water


Plain dough
175g Pao Flour
5g vegetable shortening
30g caster sugar
1/2tsp double action baking powder
1/2tsp instant yeast
90g water

Method

  1. To make purple dough. Mix all ingredients in a mixing bowl, slowly add in water and knead till smooth dough. Cover and set aside at warm place to proof for 15mins.
  2. To make plain dough. Mix all ingredients in a mixing bowl, slowly add in water and knead till smooth dough. Cover and set aside at warm place to proof for 15mins.
  3. Divide the dough into 40g each and shape to smooth ball. Shaping individual as per your preference. Set aside to proof for 30-45mins.
  4. Steam over high flame for 15mins.

Purple Sweet Potato Red Bean Buns ??????

Today just wanted to bake some bread for tomorrow breakfast. Since i have homemade red bean paste and mashed purple sweet potato which leftover from making purple sweet potato sushi the other day.So just came out with this new recipe.




Still using the same recipe from earlier purple sweet potato hot cross buns , just fill in with red bean paste this time.

This time i gotten not so good quality of purple sweet potato, so i can't get sharp purple colour ..Nevertheless this bun is soft and love the less sweet homemade red bean paste.





Purple Sweet Potato Red Bean Buns ??????
*makes 10 buns

For the bread
75g mashed purple sweet potato
250g High protein flour or bread flour
30g caster sugar
25g sweetened condensed full cream milk
1tsp instant yeast
120g milk
1/4tsp fine salt
25 unsalted butter


For filling and topping
200g red bean paste ( I used homemade )
10 almond nuts
More bread flour for sprinkle

Method

  1. Mix all bread ingredients in a mixing bowl except butter, mix till smooth.
  2. Add in butter, knead till elastic and shining dough. Set aside to rise for 1hr.
  3. Equally divide into 10 portions, roll into round ball, rest for 15mins. Divide red bean paste into portions, roll in round ball.
  4. Flatten the dough, place a red bean ball, wrap the dough and shape it round. Slightly flatten the dough, then use a sharp knife to make a 6 cuts on the sides. Press one almond at the centre, then place dough on the lined baking tray, set aside to rise about 45mins.
  5. Dust dough with flour, bake at pre-heated oven 180C for 15mins.

Purple sweet potato chiffon cake ??????

After I baked some purple sweet potato burger buns for lunch the other day, I use the leftover mashed purple sweet potato to bake a purple sweet potato chiffon cake yesterday. I was quite surprised that it has quite strong sweet potato taste if compare to burger buns which we couldn't detect the taste.



First time tried a popular method of made 4 slits while baking a chiffon cake, created beautiful cracked effect!?



Purple sweet potato chiffon cake ??????
*makes a 7� cake  

3 egg yolks
15g caster sugar
40g corn oil
35g milk

55g cake flour
50g mashed purple sweet potato 

3 egg whites
55g sugar
1/2tsp lemon juices 

Cooked small purple sweet potato cubes, optional

Method

1. Hand whisk egg yolks and sugar till pale.
2. Add in corn oil, milk, and mashed purple sweet potato, mix well.
3. Add in flour and combine well, set aside.
4. Beat egg whites over high speed till foamy. Slowly add in sugar, beat till soft peak formed.
5. Take 1/3 portion of egg white mixture and use hand whisk to mix with egg yolk mixture till light.
6. Fold the balance of egg white mixture into egg yolk mixture, put few drops of lemon juices to change the colour tone, combine well. Add in cooked small purple sweet potato cubes, mix well.
7. Pour cake mixture into baking pan, lightly tap on worktop to remove air bubbles. Bake at pre-heated oven at 170c for 35mins (at middle rack) or adjust to your oven as every oven is difference. You may made 4 slits while baking to create nice cracked effect ( do it after baked about 10mins, remove cake pan from oven, quickly make 4 slits with a sharp knife). Inverted the cake pan and remove cake once it is cool completely.

Purple Sweet Potato Hot Cross Buns ????


This is like normal potato buns, I just changed potato to purple sweet potato, just love sweet purple buns. They are so soft and good!




I find the white topping turned a bit hard after cooled down..you may omit it..?



Purple Sweet Potato Hot Cross Buns ???? 

For the bread
75g mashed purple sweet potato
250g High protein flour or bread flour
30g caster sugar
25g sweetened condensed full cream milk
1tsp instant yeast
120g milk
1/4tsp fine salt
25 unsalted butter 


For topping
40g high protein flour
55g milk
10g caster sugar 

Method

  1. Mix all bread ingredients in a mixing bowl except butter, mix till smooth.
  2. Add in butter, knead till elastic and shining dough. Set aside to rise for 1hr.
  3. Equally divide into 9 portions, roll into round ball, baking on baking tray (9"x9"). Set aside to rise about 30mins.
  4. Mix topping ingredients till smooth paste, fill in a piping bag, draw lines on top of the bread.
  5. Bake at pre-heated oven 180C for 20mins.
